Heavenly White Cake Recipe


Everyone needs a "go to" recipe, and this cake recipe is mine!  It such a yummy birthday cake all by itself, but it is also so easy to create tons of different flavors just by switching up your icing!  It is also a great cake recipe for sculpting because it holds together well.  Some of my favorite icing combinations with this recipe are vanilla buttercream, lemon buttercream (perfect on a spring or summer day!) and cream cheese icing with a strawberry filling...YUM!! :-)

White Cake(Two 9-in round)
2 C minus 1 ½ t reg flour (or 2 ¼ C cake flour)
1 ½ t baking powder
½ t salt
¾ cup packed veg. shortening
1 ½ C sugar
½ C milk
6 Large egg whites
1 t vanilla extract
¼ t almond extract
~Sift flour with Baking soda and salt, twice. Combine the sifted ingredients with the veg Shortening in the mixer bowl. Beat at low speed for one minute or until the ingredients are combined and the fat is broken down into small particles. Add the sugar about 2 TBL at a time until mixed in. With the electric mixer running on low speed, slowly add the milk, making sure the batter is absorbing it.
~Combine the egg whites with the vanilla and almond extracts and, with the machine running on low, slowly add this mixture to the batter. Beat two to three more minutes, scrapping down the beaters and sides of the bowl as needed. Pour into pans.
~Bake at 350 F for 25-30 minutes
